Mums Shortcake


Mums Shortcake biccies

What you need:

50g of Caster Sugar
125g of Unsalted Butter
1 Egg yolk
175g of Plain Flour
Icing Sugar to decorate (optional)

How to:

Cream together the sugar and softened butter,
Beat in the yolk,
Sift in the flour and mix till you get a ball of dough,
Roll into a sausage shape, cling film and chill for a hour,
Cut the dough into 10-15 discs about half a inch thick,
Bake for 5-8min depending on size,

Either dust with icing sugar whilst cooling
or
Once cooled do as i do and smother in jam, or nutella, strawberries and cream.
